Ingredients:

  • 5-6 chicken breasts
  • 1 cup salsa
  • 1 can diced tomatoes {14 oz}
  • Medium diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1 pkg taco seasoning
  • 3 Tbsp sour cream (for serving)
  • Fresh cilantro, chopped (for garnish)

Directions:

Combine all of the ingredients into a slow cooker.

Cook 6-8 hours on low in the crockpot.

What to serve with salsa chicken:

  • Cheddar cheese, green onions, chopped green chilies, and extra sour cream and salsa, are some of our favorite toppings. Add a squeeze of lime juice too, if you like.
  • Serve on top of rice. Use white or brown rice, or try a cauliflower rice for a lower carb option.
  • Beans, such as black beans, pinto beans, or kidney beans, go well with this chicken.
  • Combine all the above into burrito bowls. Layer rice, beans, and salsa chicken into bowls, then add your toppings.
  • Try wrapping the chicken mixture in flour or corn tortillas, or just scoop it up with tortilla chips.

Tips & tricks:

  • Chicken thighs can be used as well as boneless skinless chicken breasts.
  • Before serving, shred the chicken. This allows the meat to go further and makes everything a little easier to eat.

  • I like to use my homemade salsa for this recipe, but you can use your family’s favorite salsa.
  • If your family prefers spicy dishes, add some extra chili powder or use hot salsa.
