One of our families favorite meals is quick and easy roast beef sandwiches with swiss cheese and dipped in this tasty Au Jus. it's so easy and everyone loves it. A fun summer meal, or even great for the winter cold season. Serve it with a side of french fries or sweet potato fries and you're set.

This recipe is made without wine, and depending on the type of beef broth you use, low sodium. It's a simple beef broth that is flavored with herbs and spices, and can be made quickly with just a few basic ingredients.

  • Beef broth- This recipe is without drippings but you want to make sure you use a high quality broth like better than bouillon or beef bone broth.
  • Butter- A salted or unsalted butter is great. Or you can use beef drippings for the fat if you have any.
  • Worcestershire sauce- This adds the perfect flavoring to the sauce. It gives it that taste you love. I tested this recipe many times to get that perfect amount of Worcestershire sauce to perfectly compliment the other flavors.
  • Garlic powder- A touch of flavor in a quick and easy way.
  • All-purpose flour- Use this to help thicken up the sauce so it isn't just a watery broth. If you are needing a gluten free dip, skip this ingredient. It doesn't change the taste, just the consistency.

Hint: You can make this dipping sauce with almost any type of meat. If you are making chicken turkey or any cuts of meat that have great drippings then use that broth instead of beef broth. Or use chicken or turkey broth.

Substitutions and Variations

We love switching things up when we're in the kitchen. Try any of these variations for something a little different.

  • Creamy- For a creamy version, once the ingredients are whisked together, stir in ½ cup of whipping cream. Make sure to remove from the heat before whisking in.
  • Plain Beef Broth - in a pinch and don't have time to make the full recipe. Though not as flavorful, you can use plain beef broth in a pinch for french dip or extra flavor to any meat.
  • Gluten free- This can be a gluten free option by making substituting corn starch, which is gluten free, for the flour.
  • Garlic and herb- Make this a garlic and herb option by adding 1 teaspoon of garlic powder and 1 tablespoon of Italian seasoning.
  • Chicken or Turkey- Make this a turkey or chicken au jus style by using chicken broth or turkey broth instead of beef broth. Use all of the same ingredients and enjoy this with poultry meals.
  • Dairy Free- Make this dairy free by not using butter in this recipe. Use dripping from the meat instead for the fat.

What to do with Leftover Au Jus?

You'll want to serve this with beef, such as prime rib or roast beef sandwiches, but you can also be use this as a dipping sauce for other meats or even french fries. We've even tried it as a base for soups or stews to add depth of flavor. Serving it hot is best.

  • 2 cups beef broth I used better than bouillon or beef bone broth
  • 2 Tablespoons butter or beef drippings
  • 2 teaspoons Worcestershire sauce
  • teaspoon garlic powder
  • salt and pepper to taste
  • 1 Tablespoon all-purpose flour optional, for a slightly thicker sauce

Instructions

  • Heat butter (or beef drippings) in a saucepan over medium heat. Stir in garlic (and flour if using) and heat until bubbly. Add the beef broth and Worcestershire sauce and whisk to combine (If using flour, whisk vigorously until no lumps remain). Bring to a boil then remove from heat. Add salt and pepper as desired.
